Every recipe, ingredient note and cooking technique on this site is published for general informational and entertainment purposes. It reflects home cooking as it has traditionally been practiced in Korean kitchens, described the way a recipe writer would describe it to another home cook, not the way a clinician or registered dietitian would.

Ingredient sourcing and substitutions
Ingredients like sesame oil, perilla oil, doenjang, and gochugaru vary in strength and quality between brands and regions. A dish that reads as balanced with one brand of sesame oil may read as heavier or lighter with another. Use your own judgment, taste as you cook, and adjust seasoning to your own kitchen rather than treating quantities as fixed.
Cooking safety
Several recipes on this site involve hot oil, open flame, sharp knives, and fermentation. Ordinary kitchen safety applies: keep a close eye on anything frying, never leave hot oil unattended, and use your own judgment about food safety, including how long fermented ingredients like doenjang or kimchi should be kept and at what temperature. We describe methods that work in our own kitchen; we cannot supervise yours.
Results will vary
Cooking is not a laboratory science. Two cooks following the same recipe with the same ingredients can still end up with slightly different results because of differences in stove output, pan material, altitude, and simple hand-feel that develops with practice. Treat quantities and times in each recipe as a well-tested starting point, not an absolute.
